Ingredients
For roasting the eggplant:
- 1 large eggplant /2 Medium size eggplant Baingan
- 1 tablespoon oil
- Salt to taste
For the Baingan Bharta:
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 onion finely chopped
- 1 tablespoon ginger-garlic paste
- 2 tomatoes finely chopped
- 1 green chili finely chopped
- 1 teaspoon coriander powder
- 1/2 teaspoon cumin powder
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- Salt to taste
- 1/4 cup chopped coriander leaves
Instructions
- Wash the eggplants and pat them dry. Poke them all over with a fork.
- Heat a griddle or tawa on medium heat. Place the eggplants on the griddle and roast them for 10-15 minutes, turning them occasionally, until the skin is charred and the flesh is soft and cooked through. Remove from heat and let them cool.
- Once cooled, peel off the charred skin and mash the eggplant flesh with a fork. Keep aside.
- Heat oil in a pan on medium heat. Add cumin seeds and let them crackle.
- Add chopped onions and green chilies. Cook until the onions turn translucent.
