SEAFOOD PASTA 

INGREDIENTS:

  • 375g pasta 
  • 125g squid 
  • 250g scallops 
  • 6 oysters 
  • 250g cooked prawns 
  • 1 cup water 
  • ½ cup dry white wine 
  • 4 spinach leaves 
  • 2 shallots 

LEMON - WINE SAUCE 

  • 60g butter
  •  1½ cups dry white wine 
  • 1 tablespoon lemon juice 
  • ½ cup cream 
  • 2 teaspoons cornflour 
  • 1 tablespoon water 
  • salt, 
  • pepper 
  • 1 tablespoon chopped chives 

 SEAFOOD PASTA  RECIPE:

Clean squid and cut into 1cm rings. Cut scallops in half. Shell and devein prawns, cut prawns in half lengthwise. Boil water and wine in the pan, add squid and scallops, remove from heat, and stand for 1 minute; drain, reserve liquid for Sauce. Shred spinach finely and chop shallots. Cook pasta in boiling salted water for 10 to 15 minutes; drain. Add all seafood, spinach, and shallots to the pasta and mix well. Pour Sauce over, and stir through lightly. 

Lemon - Wine Sauce: Melt butter in the pan, add wine, and boil rapidly until reduced to ½ cup. Add 1 cup reserved scallop liquid and boil until reduced to % cup. Add lemon juice and cream. Blend cornflour with water, add to sauce, and stir until sauce boils and thickens. Season with salt and pepper. add chives before serving. 

Serves 6.
