 WARM BEEF AND WALNUT SALAD

INGREDIENTS

  • 500g pasta elbows
  • 500g piece beef eye - fillet
  • 2 tablespoons lemon juice
  • 2 tablespoons light soy sauce
  • 1 tablespoon oyster sauce
  • 2 cloves garlic, crushed
  • 2 tablespoons olive oil
  • 1 red pepper, chopped
  • 1 cup ( 120g ) chopped walnuts
  • 4 green shallots, chopped

 DRESSING

  • 1/4 cup olive oil
  • 1 clove garlic, crushed
  • 1 tablespoon white vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh chives

 WARM BEEF AND WALNUT SALAD METHOD:

The noodles should be cooked in a large pan of boiling water, uncovered, for about 10 minutes, and then drained, to keep warm. 

Cut beef into 1cm cubes, combine with juice, sauces, and garlic in a bowl; cover, and refrigerate for 1 hour. Heat oil in a pan, add the beef mixture in batches, and cook, stirring, until the beef is cooked as desired. 

Combine beef mixture and pasta in a bowl; keep warm. Add pepper to the pan of boiling water, boil for 1 minute; drain. Add pepper, nuts, shallots, and dressing to pasta; toss well 

Dressing: Combine all ingredients in a pan, and stir over heat until heated through.

Serves 4.

Note: The recipe is best made just before serving.

Freeze: Not suitable.

Microwave: Pasta suitable
