SMOKED SALMON WITH FRESH ASPARAGUS

INGREDIENTS

  • 500g spaghetti pasta
  • 400g sliced smoked salmon
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 bunches ( 24 spears ) of fresh asparagus, chopped
  • 1 tablespoon brandy
  • 2 teaspoons white mustard seeds
  • 2 x 300ml cartons cream
  • 2 tablespoons shredded fresh basil

 SMOKED SALMON WITH FRESH ASPARAGUS METHOD:

The noodles should be cooked in a large pan of boiling water, uncovered, for about 10 minutes, and then drained, rinsed under cold water, and drained.

Cut salmon into 2cm strips. Heat oil in a pan, add onion, cook, stirring, until soft. Add salmon, asparagus, brandy, seeds, and cream.

Cook uncovered, stirring basil occasionally, until slightly thickened. Serve hot sauce over pasta.

Serves 4.

Note: The recipe is best made just before serving.

Freeze: Not suitable.

Microwave: Suitable.
