CHICKEN SALAD WITH FRESH THYME DRESSING

INGREDIENTS

    • 2 chicken breast fillets
    • 1 cup ( 125g ) fresh or frozen green peas
    • 1 quantity of plain pasta dough

 

FRESH THYME DRESSING

    • 2 egg yolks
    • 2 tablespoons cider vinegar
    • 1 cup olive oil
    • 3 teaspoons chopped fresh thyme

 

CHICKEN SALAD WITH FRESH THYME DRESSING

Poach, steam, or microwave chicken until tender, and cool; cut into thin strips. Boil, steam, or microwave peas until tender, drain; cool. Roll pasta dough until 2mm thick, and cut it into 3cm ribbons.

Boil the pasta until just tender, uncovered, in a large pot of boiling water; drainRinse pasta under cold water; drain.

Combine chicken, pasta, peas, and dressing in a bowl; mix gently. Fresh Thyme

Dressing: Blend or process egg yolks and vinegar until smooth. Add oil gradually in a thin stream while the motor is operating, and blend until thick. Stir in thyme.

Serves 4.

Note: Can be prepared 2 hours ahead.

Storage: Covered, in refrigerator.

Freeze: Not suitable.

Microwave: Suitable.
