SESAME ROAST DUCK WITH HERBED PASTA
INGREDIENTS
- 1 quantity of herbed pasta dough
- 1 Chinese roast duck
- 310g can mandarin segments, drained
- 1/2 x 160g punnet snow pea sprouts
SESAME DRESSING
- 1/3 cup olive oil
- 1 tablespoon sesame oil
- 1/4 teaspoon five spice powder
- 1 clove garlic, crushed
- 1/3 cup lime juice
- 2 tablespoons honey
- 1 teaspoon sesame seeds
SESAME ROAST DUCK WITH HERBED PASTA METHOD:
Roll dough until 2mm thick, cut into 8 x 12cm squares. The pasta should be added to a large pot of boiling water, boiled until just tender, drained, and rinsed under hot water; drain.
Remove meat from the duck, and cut meat into 1cm slices. Combine duck meat, man drains, and sprouts in a bowl.

Just before serving, place a square of pasta onto each plate. Divide half the duck mixture over squares, sprinkle with a little of the dressing; repeat layering.
Sesame Dressing: Combine all ingredients in a jar; shake well.
Serves 4.
Note: Can be prepared 6 hours ahead.
Storage: Covered, in refrigerator.
Freeze: Not suitable.
Microwave: Pasta suitable.
