Chicken Corn Chowder Recipe
Ingredients:
1 pound beef stew meat, cut into small pieces
1 head of cabbage, chopped
4 carrots, chopped
4 celery stalks, chopped
1 onion, chopped
4 cloves of garlic, minced
6 cups of beef broth
1 can of diced tomatoes (14.5 ounces)
1 teaspoon of dried thyme
1 teaspoon of smoked paprika
1 teaspoon of salt
1/2 teaspoon of black pepper
2 tablespoons of olive oil
Instructions:
In a large pot, heat the olive oil over medium heat.
Add the beef stew meat and cook until browned on all sides, about 5 minutes.
Add the chopped onion and garlic to the pot and cook for 2-3 minutes until softened.
Add the chopped cabbage, carrots, and celery to the pot and stir to combine.
Add the beef broth, diced tomatoes, dried thyme, smoked paprika, salt, and black pepper to the pot.
Bring the soup to a boil, then reduce the heat to low and let it simmer for 30-45 minutes until the beef is tender and the vegetables are cooked through.
Serve the soup hot with some crusty bread on the side.
