            1. Look on the label for information about the variety of olives from which the olive oil is made. This cannot guarantee you that very little time has passed between the harvest and the start of olive oil production. However, if the manufacturer does not indicate on the label which olives the oil is made from, this can only mean one thing: this manufacturer has no idea what olives varieties they use. They simply bought several tons of this not very fresh raw material and all they cared about at that moment was buying them as cheaply as possible. So this product is definitely not what you need to enjoy the fresh natural olive taste and strengthen your body.  

            While it can be challenging to determine the exact time between olive harvesting and processing, these guidelines can help you make more informed choices when purchasing olive oil.
