Palak paneer is one of the famous side dish. As we know leafy veg. are good for health, that to spinach and methi. So lets try it.
Ingredients:
-spinach/palak
-fenugreek/methi leaves
-paneer pieces as per your requirement
-1 big onion
-1 med tomato/tomato puree
-3 chilies
-1/4 tsp turmeric powder (opt)
-1tsp garam masala
-1tsp coriander powder (opt)
-1/2 tsp red chili powder
-mint leaves (opt)
-coriander leaves (opt)
-1/4 tsp sugar
-salt
-2tbsp oil
-water
Paste:
1/2 inch ginger
2 cloves garlic
1 inch dry/fresh coconut
2tsp watermelon seeds
2 tsp kus-kus
1 tsp sesame seeds
6 cashew
2 tbsp milk
Procedure:
-make a fine Paste of all the paste ingredients.
-take spinach and methi/fenugreek in 2:1 .
-take both leaves and add water till they cover in a vessel and cook for 5 min with a lid.
-drain water and make the leaves into paste. This paste should be around 1 or 11/2 cup.
-dont throw the drained water.
-make tomato paste.
-take oil in a sauce pan and heat it.
-Saute finely chopped onions.
-when they turn golden brown add the first paste and saute till the oil comes out.
-add spinach paste and saute till raw smell lost.
-add tomato paste and saute for a while.
-add slit chilies, salt, sugar, chili powder, garam masala, coriander powder, fresh/dry mint, curry leaves and saute for 5 min.
-add paneer and saute till oil comes out.
-add drained water and cook with a lid with occasional stirring till the oil comes out.
- take out the lid and cook on high flame for 5 min and turn off the flame.
-check the taste and add chopped coriander leaves.
-ready to serve with tandoori item or rice item.
Tips:
-If paneer is not available, you make it at home. No need to make cubes.You can use it directly.-before using soak in the water and squeeze the paneer cubes.
-if you want rich taste add more and more cream at the end.
-in the grinded items if any of the watermelon or kuskus or coconut or sesamseeds not available substitute the quantity with other ingredients.
-you can skip coriander leaves
-instead of tomato use 1 tbsp curd
-you can boil and grind tomato along with leaves. While boiling dont cut it. At the time of grinding better cut it.
-gravy becomes little thick after removing from the flame.
