Ingredients of Chipotle Chicken Recipe

  • 1 dried chipotle hot pepper, 1 ounce
  • 1-ounce ancho chile pepper, dried
  • 1/2 cup of water
  • 12 red onions, cleaned and sliced
  • 4 garlic cloves
  • 2 teaspoons sea salt
  • 1 teaspoon cumin,
  • 1 teaspoon. dried oregano
  • 1 teaspoon black pepper, freshly ground
  • 2 tablespoons of olive oil
  • 2 1/2 pound boneless, skinless chicken thighs

Directions

  • In a small dish, combine the chipotle and ancho chile peppers with the water. Cover the bowl and set aside at room temperature for 10 to 12 hours, or until the peppers soften. Drain the peppers and remove the seeds.
  • In a blender, combine chile peppers, red onion, garlic, sea salt, cumin, oregano, and black pepper to make a coarse paste; add olive oil and process until the marinade is smooth.
  • Place the chicken thighs on a sturdy, flat surface between two pieces of thick plastic. Pound the chicken to a 1/2-inch thickness using the smooth side of a meat mallet.
  • Place the chicken in a resealable plastic bag and cover it with the marinade. To coat the chicken, turn it several times. Refrigerate for at least 8 hours after sealing the bag.
  • Preheat the top and bottom plates of an indoor grill to medium-high heat.
  • Take the chicken out of the bag and discard the marinade.
  • Close the top and cook until the chicken is no longer pink in the middle and the juices run clear for 5 to 7 minutes. In the middle, an instant-read thermometer should read at least 165 degrees F. (74 degrees C). Serve the chicken in strips while it is still warm.

Tips

If you don’t have an inside electric grill, wrap a paver brick in aluminum foil and set it on top of the chicken while cooking on an outdoor grill to keep it level.

If preferred, soak chile peppers in chicken broth instead of water.
