Restaurant style Lasooni-Methi-लसूणी-मेथी | Hotel style Methi ki sabji 

Lasooni-Methi-लसूणी-मेथी is a creamy, spicy, and delectable meal cooked with fresh methi saag/fenugreek leaves. The meal is so delicious that you will lick your fingers until the finish. You could think it’s an overkill for this meal, but trust me when I say it’s worth it. Lasuni, as the name suggests, has a strong garlic flavour with a unique combination of additional spices that complement the methi. The recipe is straightforward, and the components are readily available.

Lasooni-Methi-लसूणी-मेथी

A vegetable can be prepared in a variety of ways, resulting in a wide range of meals. Take potato, for example, and you may come up with many dishes such as aloo paratha, aloo ki sabji, aloo tikki, and many more. That is the allure of cooking. However, when preparing a meal, keep in mind that the flavour of the vegetable should always take precedence. As in the Lasuni methi recipe.

Similarly, methi/fenugreek leaves are used in a variety of dishes. Some popular methi dishes include aloo methi, methi matar malai, dal methi, methi puri, methi ka paratha, methi mathri, and many more. One of the most famous methi meals is Lasooni-Methi-लसूणी-मेथी, which I will share with you all today.

Ingredients:
1 bunch fresh methi/fenugreek leaves
7 to 8 garlic cloves
1 1/2 teaspoon chopped garlic Onion – 2 medium
1 chopped tomato – 1 tsp red chilli powder
1 tsp jeera/cumin
1/2 teaspoon turmeric powder, 1/2 teaspoon garam masala powder
3 to 4 whole red chilies
3 tbsp oil
To taste, salt

To make the paste
1 tablespoon peanuts
1 tbsp sesame seeds/til
Besan/chickpea flour – 1 tbsp

Directions for making Lasooni-Methi-लसूणी-मेथी recipe:


For making the paste

Dry roast the peanuts, sesame seeds/til, and besan/chickpea flour separately. This is a vital step, so don’t skip it. Roasting will increase their flavour and make the meal more flavorful. Roasting besan/chickpea flour is critical since uncooked besan is more sticky and imparts a raw flavour to the meal. Remove the peel off the peanuts. Set them aside to cool. Then, using some water, prepare a paste of these three components.

Ingredients for making paste

Prepare the lasooni-methi-लसूणी-मेथी Recipe.

  • Wash the methi leaves with water and squeeze out as much water as possible with a dish towel.
  • In a kadai/pan, heat 1 to 2 teaspoons of oil.
  • Mix in the methi/fenugreek leaves.
  • Mix in the jeera and entire garlic cloves. Cook for a few seconds.
  • Cook for 5 minutes on high heat. Cook for 2 minutes after seasoning with salt. Set it away.
  • Keep all of the materials available and close at reach.
  • 2 to 3 tbsp oil in another kadai/pan.
  • Chop the garlic and add the entire red chilli. After a few seconds, add the chopped onion.
  • Cook until the onion becomes pink or transparent.
  • Season with red pepper flakes, turmeric powder, and garam masala powder. Make sure to thoroughly combine all of the ingredients.
  • Cook until the tomato has softened.
  • Mix with the prepared paste.
  • Cook the paste until it is oil-free. Stir every now and again.
  • Finally, fold in the cooked methi.
  • Add some hot water to get the desired consistency. Salt to taste.
  • Cook for another 2 minutes.
  • To add flavour, temper the oil with chopped garlic.
  • Serve hot with any roti.
