Spaghetti Carbonara
Italian cuisine is known for its delicious and diverse range of dishes. One of the most beloved Italian dishes around the world is pasta, and there are countless variations to choose from. Here's a classic Italian favorite:
Ingredients:
➨8 ounces (225g) spaghetti
➨4 ounces (115g) Pancetta or bacon, diced
➨3 large eggs
➨1/2 cup grated Parmesan cheese
➨1/2 cup grated Pecorino Romano cheese
➨2 cloves garlic, minced
➨Freshly ground black pepper
➨Salt, to taste
➨Chopped fresh parsley (optional, for garnish)
Instructions:
💟Cook the spaghetti in a large pot of salted boiling water until al dente, according to the package instructions. Drain and set aside.
💟In a large skillet, cook the pancetta or bacon over medium Heat until crispy. Remove from heat and set aside.
💟In a bowl, whisk together the eggs, Parmesan cheese, Pecorino Romano cheese, minced garlic, and a generous amount of freshly ground black pepper.
💟Return the skillet with the pancetta or bacon to low heat. Add the cooked and drained spaghetti to the skillet, tossing to coat it with the fat from the pancetta or bacon.
💟Remove the skillet from the heat and quickly pour the egg and cheese mixture over the spaghetti.
💟Toss continuously to coat the pasta evenly, allowing the heat from the spaghetti to cook the eggs and create a creamy sauce. Be careful not to let the eggs scramble.
💟If needed, you can add a little pasta cooking water to help create a smooth and creamy sauce.
💟Season with salt if necessary (keep in mind that the pancetta or bacon and cheeses are already salty).
Serve immediately, garnished with chopped fresh parsley if desired.
