How to Make Kachori   - कचोरी  कैसे बनाये


Ingredients :-

  • 1 cup all-purpose flour
  • 1/4 cup semolina flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon carom seeds (ajwain)
  • 2 tablespoons ghee or oil
  • 1/4 cup water (or as needed)
  • Oil for deep frying

For the filling :-

  • 1 cup split yellow moong dal (skinless and split green gram)
  • 1/2 Teaspoon salt
  • 1/4 teaspoon red chili powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon cumin powder
  • 1/4 teaspoon garam masala powder
  • 1/4 teaspoon amchur powder (dry mango powder)

Instructions :-

1.To make the dough, combine the all-purpose flour, semolina flour, salt, baking powder, carom seeds, ghee or oil, and water in a large mixing bowl. Knead the dough until it becomes smooth and elastic. Cover the dough with a damp cloth and set it aside for at least 30 minutes.

2.To make the filling, rinse the moong dal and soak it in water for at least 2 hours. Drain the water and grind the moong dal to a coarse paste using a food processor or grinder.

3.Heat a pan over medium heat and add the ground moong dal paste. Stir in the salt, red chili powder, coriander powder, cumin powder, garam masala powder, and amchur powder. Cook the filling for about 10-12 minutes, or until it becomes dry and crumbly.

4.Divide the dough into small balls, about the size of a golf ball. Roll out each ball of dough into a small circle, about 3-4 inches in diameter. Place a tablespoon of the filling in the center of each circle and fold the edges of the dough over the filling to form a ball.

5.Heat oil in a deep pan or kadhai over medium-high heat. Once the oil is hot, gently slide in the kachoris and deep fry them until they become golden brown and crispy. Drain the kachoris on a paper towel to remove excess oil.

6.Serve the kachoris warm with chutney or pickle of your choice.
