How to make Undhiyu - उंधियू कैसे बनाते है






Ingredients :-

  • 2 eggplants
  • 1 cup frozen green peas
  • 1 yam, peeled and diced
  • 1 cup diced green beans
  • 1 cup diced carrots
  • 1 cup diced potato
  • 2 tablespoons oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1 teaspoon fennel seeds
  • 1 teaspoon coriander seeds
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • Salt, to taste


Instructions :-

1.Preheat the oven to 400 degrees F.


2.Cut the eggplants in half lengthwise and place them cut-side down on a baking sheet. Roast for 15-20 minutes, or until tender.


3.In a large pot, heat the oil over medium heat. Add the mustard seeds, cumin seeds, fennel seeds, and coriander seeds and cook for 1-2 minutes, or until fragrant.


4.Add the cumin powder, coriander powder, and garam masala and stir to combine.


5.Add the diced yam, green beans, carrots, and potato to the pot and stir to coat with the spices.


6.Add 1 cup of water and bring to a boil. Reduce the heat to low and simmer for 15-20 minutes, or until the vegetables are tender.


7.Stir in the Frozen Green Peas and roasted eggplants and cook for an additional 5 minutes.


8.Season with salt, to taste, and serve hot.
