Ingredients Shredded Chicken Sambal Matah


4 pieces of chicken breast


400 ml of water


200 ml thick coconut milk


3 cm galangal, bruised


1 stalk of lemongrass, bruised


1 tsp white pepper round


1 tsp salt


Sambal Matah:


50 g of red cayenne pepper


5 red onions


5 lime leaves, remove the bones


1 stalk of young lemon grass, take the white part


2 limes


½ tsp shrimp paste, grilled


½ tsp salt


½ tsp sugar


4 tbsp coconut oil, heat it


How to make Shredded Sambal Matah Chicken:


1. In a saucepan, add the chicken breast, water, coconut milk, galangal, lemon grass, pepper and salt. Boil the chicken until cooked, warm. Chill, coarsely shred. set aside.


2. Sambal Matah: Finely dice red bird's eye chilies, shallots, lime leaves, and lemongrass.


3. In a bowl, add sliced ​​ingredients, add lime juice, shrimp paste, salt and sugar. Stir well.


4. Heat the coconut oil, pour it over the chili sauce, stir. Add shredded chicken. Stir well. Serve.
