Cardamom Baked Apples with Mascarpone

Nicely spiced oven-roasted apples

For those who love to eat something sweet but want to avoid spending a long time preparing it, then this Cardamom Baked Apples with Mascarpone recipe is just the right thing.

A mix of fragrant spices including Cardamom, cinnamon and allspice flavour the apples, mascarpone and butter bringing the whole dish beautifully together. Topped with maple syrup and toasted flaked almonds, the elements are simple to assemble.

Baking apples is easy

Heat the oven to 180°C. Cut apples in half and remove the core. Place halves onto a paper-lined oven tray. Sprinkle with prepared spice mix and bake for 45 minutes or until nicely brown and soft. It’s as simple as that. Whilst they are cooking only a few additional minutes are required to prepare the whipped mascarpone and toasted almonds, then it is time to relax until the timer beeps.

Cardamom and apples

The highly aromatic, sweet, minty, herbal, and lightly floral flavour of cardamom makes it a wonderful spice to combine with fruits. Along with cinnamon and allspice, these 3 aromatics bring a warm festive feel and taste to the overall dish.

Whipped mascarpone cream

Whipped mascarpone has a luscious light texture and its cooling neutral flavour lays down a good base for sweet apples and floral spices. The great thing here is you are in control of how sweet the dish is. Add a little or as much maple syrup as you please to get the level suited just right to your palette. As the final touch, toasted almond flakes add a moreish texture and crunch.

Easy dessert of baked apples on mascarpone spiced with cardamom, cinnamon, and allspice. Topped with maple syrup and crunchy toasted flaked almonds

Ingredients

  • 2 apples (Gala or Pink Lady is ideal)
  • 2 large cardamom pods
  • 1/2 tsp ground cinnamon
  • 1/4 tsp allspice
  • 2 tbsp butter
  • 250g mascarpone
  • Maple syrup
  • 2 tbsp flaked almonds

Instructions

  1. Heat the oven to 180°C
  2. Using a small pan, dry roast cardamom pods over medium heat until fragrant. Remove and bash pods open in a pestle & mortar or with the back of a knife. Remove seeds and crush down into a powder. Combine cardamom powder with cinnamon and allspice.
  3. Cut apples in half and remove the core.
  4. Line a small baking tray with baking paper. Lay apples down with the cut edge facing up. Sprinkle the apples lightly with a pinch of the spice mix. Place in the oven and roast for 45 minutes or until nicely brown and soft.
  5. For the mascarpone: place mascarpone in a bowl along with 1/3 of the spice mix. Blend with a hand blender until fluffy, approx 20 seconds. Place in the fridge until needed.
  6. Lightly toast almond flakes until golden. Transfer to a small bowl and keep aside until needed.
  7. Remove apples from the oven and allow to cool. When ready to serve melt the butter in a small pot until all the milk solids have evaporated and the butter starts to turn brown. Be careful not to burn. When light and nicely browned, remove from heat and stir through the remaining spice mix.
  8. To Serve: divide mascarpone between 4 bowls. Place an apple half on top. Spoon spice butter over the apple halves. Drizzle with maple syrup and garnish with flaked almonds.

Notes

Prepare the dish in advance: to make the day before or the morning before dinner, roast apples as instructed, and when cooled place in the fridge covered with cling film until needed. The mascarpone cream can also be made in advance, both ingredients will benefit from the resting time and allow spice flavours to develop more deeply.
