Ingredients

  • 2 eggs
  • 250ml Magic Tomato Sauce, recipe here
  • ¼ red pepper sliced thin
  • Splash water
  • Handful baby spinach
  • Salt and pepper
  • Dill for garnish

Optional sides

  • Toasted sourdough bread
  • Youghurt
  • Chill Sauce

Instructions

  1. Add oil to a frying pan and saute pepper slices until starting to caramelize and gain a little charred colour.
  2. Add Magic Tomato Sauce and a splash of water, cook for 1 minute.
  3. Add the baby spinach, distribute evenly among the sauce (add another splash of water if the sauce is getting dry), then crack in the eggs, and season with salt. Turn heat down a little and cover pan with a lid. Let Eggs cook away gently until the white has set and the yolk is still soft.
  4. Toast bread and pour a little olive oil over it.
  5. When the eggs are ready, remove the pan from stove. Garnish with dill. Serve shakshuka in the pan along with toasted bread. Youghurt and chill sauce would also be a nice side option.
