Pork Chop, Celeriac Remoulade and Apple Date Sauce

Classic pairings of apple and pork get a boost of springtime joy

It’s fair to say the sauce is the star of this dish. Of course, a butter-basted Pork Chop is undeniably juicy and the ‘pull’ to the recipe, but this intensely thick roasted apple date and ginger sauce brings an element of seduction with its almost caramel-like flavour.

Fusion celeriac remoulade

Remoulade is a refreshing alternative to potatoes or pasta due to its earthy flavour. Soy sauce and green chilli add a bit of spice and an Asian twist which complements the sweetness of the apple sauce very nicely.

Sweet and Savoury Apple Date Sauce

A winning combination of apples, Medjool dates, ginger and a little butter. Oven-roasted apples add a rich caramel flavour that develops when mixed with creamy fudge-like Medjool dates. Ginger adds a lovely spike to bring you out of the sweetness and back to savoury land. It takes only 30 minutes to prepare and can be used in a variety of sweet and savoury dishes. Pork Chop, Celeriac Remoulade and Apple Date Sauce

Ingredients

  • 2 pork chops
  • Salt and pepper
  • 1 garlic clove crushed (or 1/2 tsp garlic powder)
  • 1 tbsp butter
  • 1 x Sweet and Savoury Apple Date Sauce recipe, click here

Celeriac Remoulade

  • 250g peeled celeriac root
  • 2 tbsp lemon juice
  • 2 heaped tbsp of good mayonnaise
  • 1 tbsp of smooth Dijon mustard
  • 1/2 small green chilli, minced
  • 1 tbsp of chopped parsley, chopped fine
  • 1/2 tbsp soy sauce
  • 1 small spring onion, sliced thinly

Instructions

  1. Prepare Sweet and Savoury Apple Date Sauce as per recipe instructions
  2. For the celeriac remoulade: Grate celeriac root on the large side of a box grater. Transfer to a bowl, squeeze over lemon juice and mix well.
  3. Combine mayonnaise, dijon, green chilli, soy sauce, parsley and spring onion. Stir through grated celeriac. Taste and season with salt and pepper as needed.
  4. Pork chop: Rub pork chops with garlic and season both sides with salt. Heat some oil in a frying pan and fry pork chop until nicely browned, approx. 2-3 minutes. Flip, add butter to the pan and as the other side is cooking, baste the pork continuously with the melted butter for another 1 – 2 minutes. Remove the pork chop from the pan and allow to rest for 5 minutes.
  5. Add another teaspoon of butter to the frying pan and combine it with the pork cooking juices to make a lovely butter sauce.
  6. Serve: Divide celeriac remoulade between plates, place pork chop alongside it, and a large spoon of apple date sauce.

Notes

Serving suggestion: Goes very nicely with a glass of whiskey or bourbon
