Paneer Butter Masala is one of India’s most popular paneer recipes. This recipe with Indian cottage cheese cubes in a creamy tomato sauce is the best one that I have been making for a long time.

What is the difference between kadhai paneer recipes and butter paneer masala recipes?

Ingredient differences

As you can see above, the primary difference between the ingredients is that butter Paneer is cooked in Butter compared to kadhai Paneer, which is usually cooked in any cooking oil.
The other subtle difference is the usage of more whole spices in kadhai Paneer or Paneer Butter Masala to make it spicy. On the other hand, Shahi paneer’s inclination is a bit on the sweeter side as you can make out from the addition of Sweet Tomato sauce.

Over the years of my various paneer trials, I have noticed that Shahi Paneer tends to have more of a sun-set type of orange color and Paneer Makhani gains are a color attribute from Butter (Makhan) which is usually associated with yellow.

You can very well argue on the points and every chef/restaurant has its own recipe for making these dishes. So, this evaluation is entirely based on my experience and the fact that nobody owns the patent to the recipes!

Taste differences

The Paneer Makhani would look and taste heavier due to its gravy/curry being made with butter, cashew, and Almonds. This would certainly make it more calorie-dense than its counterpart. The strong taste and smell of Butter are inherent.

Shahi Paneer’s gravy is generally lighter and has a bit of dropping consistency. It is bound to leave a slight feeling of sweetness on your tongue after chewing the bite.

Butter paneer masala recipes ingredients

For cashew paste

  • ▢18 to 20 whole cashews
  • ▢⅓ cup hot water for soaking cashews

For ginger-garlic paste

  • ▢1 tej patta (Indian bay leaf) – optional
  • ▢½ to 1 teaspoon kashmiri red chili powder or deghi mirch or ¼ to ½ teaspoon cayenne pepper or paprika
  • ▢1.5 cups water or add as required
  • ▢1 inch ginger – julienned, reserve a few for garnish
  • ▢1 or 2 green chili – slit, reserve a few for garnish
  • ▢200 to 250 grams Paneer (Indian cottage cheese) – cubed or diced
  • ▢1 teaspoon kasuri methi (dry fenugreek leaves) – optional
  • ▢½ to 1 teaspoon garam masala or tandoori masala
  • ▢2 to 3 tablespoons low-fat cream or half & half or 1 to 2 tablespoons heavy cream – optional
  • ▢¼ to 1 teaspoon sugar – optional, add as required depending on the sourness of the tomatoes
  • ▢salt as required

  • ▢1 to 2 tablespoons chopped coriander leaves (cilantro ) – optional
  • ▢a few ginger julienne
