Pasta with Green Beans and Carrots: A 50 Minute Recipe

Welcome to the fourth recipe in our Pasta with Green Beans series of recipes. In this version, Pasta with Green Beans and Carrots, we are using carrots, onions, and diced tomatoes to change up this dish. With these ingredient changes this recipe offers a whole new eating experience.

The green beans and carrots used in this recipe are from my garden. Green beans might be my favorite vegetable to grow in the garden. I love the tiny little flowers, the shape of the bean leaves, and the fact that the beans grow quickly. I prefer to grow bush beans, and some varieties are ready for harvest in about 50 days.

The green beans in this recipe are a variety called Green Crop Bush Bean from Hoss Tools. The bean pods for this variety can get as long as 8 inches and the taste is wonderful. I highly recommend this variety.

The carrots in this recipe are a variety called Danvers 126 from Botanical Interests. This is a nice carrot. Very consistent and dependable, plus it grows well where I live.

I know the main topic of this blog is food and recipes. However, I like to sprinkle in my love for gardening. Especially when I can share what vegetables I grew and used in a specific recipe. I think it helps people, I know it does for me, when you can link the vegetable from the garden to the final recipe. In this case, pasta with green beans and carrots.

How to Make Pasta with Green Beans and Carrots

Preparing the Pasta:

  • Prepare the pasta according to the package instructions for al dente. Reserve 6 oz. of pasta water.

Preparing the Vegetables

  • While the rigatoni is cooking, in a large skillet, add the extra virgin olive oil and bring to a high heat.
  • Next, add the garlic and onion and sauté for 2 minutes, mixing occasionally.

  • Next, add the carrots and green beans and sauté for 8 minutes, mixing occasionally.

  • Lower to a medium heat, add the diced tomatoes, salt, and ground black pepper and cook for 5 minutes, mixing occasionally.

Bringing the Recipe Together

  • Continuing on medium heat add in the pasta water and bring to a simmer. Cook for 3 minutes, mixing occasionally.

  • Finally, add in the cooked pasta and cook for 2 minutes, mixing occasionally.

  • 1 lb. spaghetti
  • 2 cups green beans cut in half
  • 3 medium carrots sliced
  • 1 can diced tomatoes 15 oz.
  • 1 onion sliced
  • 2 cloves garlic sliced
  • 6 oz. pasta water
  • 1/4 cup extra virgin olive oil
  • 1 tsp. salt
  • ¼ tsp. ground black pepper

In this recipe, pasta with green beans and carrots, I am choosing to use a can of diced tomatoes. I have also made this recipe with fresh chopped plum tomatoes, sliced sun dried tomatoes, or whole grape tomatoes.
I decided on a sweet yellow onion for this recipe. However, you can use shallots, red onion, green onion, or no onions. It is entirely up to you. If you decide not to use onions, I recommend you substitute ½ tsp of onion powder so that you can retain the onion flavor in this dish.
I am using fresh green beans in this dish. I have also used frozen green beans before. When using frozen green beans, you have 2 options. You can either add the frozen green beans directly to the dish, or you can cook the frozen green beans separately, then add them to the dish. If cooking the frozen green beans first, I would add them it at the step with the diced tomatoes.
In terms of choosing a pasta, pick what you enjoy, or that you have on hand. It is my recommendation that you choose a spaghetti, linguini, rigatoni, farfalle or penne.

In terms of choosing a pasta, pick what you enjoy, or that you have on hand. It is my recommendation that you choose a spaghetti, linguini, rigatoni, farfalle or penne. Pick one of those pastas listed, add them to unique green bean recipes, and you have pasta with green beans for a meal.
