Ingredients You'll Need

Pitted Medjool Dates should be at room temperature and will provide the natural sweetness to these balls.

Unsweetend cocoa powder aka cacao powder. Be sure to check that there are no added ingredients to this powder, which will provide a sugar-free chocolate flavor.

All natural peanut butter without any added ingredients, it should be 100% peanuts. I like to use the crunchy peanut butter, however smooth creamy peanut butter will work too. Or you can use a combination of peanut butter.

Slivered almonds, or any type of small chopped nuts. This ingredient creates some texture.

Flaxseed meal is an excellent source of alpha-linolenic acid (Omega-3 essential fatty acid) and soluble fiber.

Desiccated coconut adds to the flavor and texture of these energy balls.

Vanilla extract will overall enhance the sweetness and flavor too. Be sure to use a good quality vanilla extract with minimal ingredients. 

A pinch of pink Himalayan salt is magic! The contrast between salt and sweet makes for a sweeter snack.

​Variations

Add a pinch of spices such as cinnamon, nutmeg, cardamom or similar. Adding a pinch of spice to any food is a favorite way to get additional nutrition into my meals. I try and take every opportunity I can get. 

If you love a little kick, add a pinch of chili powder such as cayenne. IMO, adding some kick creates the best peanut butter balls that are healthy and fun.

How to Make Easy No Bake Peanut Butter Chocolate Balls

In a food processor (affiliate link), add all the ingredients and process on high for at least 1 minute (you may need to pulse in 30-second increments and then scrape down the sides of the food processor bowl with a spatula (affiliate link)). The texture of the mixture will be crumbly, yet able to hold together.

Shape the balls. Line a tray with parchment paper (or wax paper).  Scoop out some of the mixture using a wooden spoon (or a small cookie scoop) and shape into a ball about 1 inch (2 ½ cm) diameter.

Find a rhythym that works for you to create the ball shape, the first time is always the practice one! Place the 1-inch balls onto the parchment paper lined tray without touching each other. Repeat until all the mixture is used up.

Place the tray into the fridge for at least one hour so they can harden. Transfer the balls into an airtight container and keep them in the fridge for up to two weeks.

Ingredients
