How to Make Khakra

Ingredients:

Whole wheat flour, cup chickpea flour (besan), tsp cayenne pepper, tsp turmeric powder, tsp carom seeds (ajwain), tsp chaat masala (optional), cup dry fenugreek leaves (kasoori methi), tsp, vegetable oil, Salt to taste.

Mix all the ingredients in a big bowl and use enough water to blend into a fairly thick dough. Let the dough stand for about 30 minutes so it relaxes. Take a ball of the dough, about 1 inch in diameter. roll the ball into a very thin circle, about 6 to 7 inches in diameter. The thinner you roll it, the crispier your khakhra will be. Heat a grill and put the khakhra on it. When bubbles rise all over the khakhra, flip it and, using a clean kitchen towel, press down on the bubbles, rotating the khakhra as you go. When golden-brown spots appear on both sides, remove them and let them cool completely, and khakra is ready to serve.
