Egg Whites: These make this recipe go further and add some easy extra protein.

Mushrooms: Use fresh mushrooms. Canned ones may lead to too much moisture in the egg bites.

Spinach: You want to break this down as much as possible. Nobody wants to take a bite of a spinach stem in their egg bite!

Ham: Opt for thick pieces rather than deli-style.

American Cheese: This should be shredded.

In addition, you will want some garlic powder, salt, and pepper.

Equipment

  • 1 Cupcake Pan
  • 1 Whisk
  • 1 Large Bowl

Ingredients
  

  • 5 Eggs
  • 5 Egg Whites
  • 2 Tablespoons Milk
  • 1/2 Bell Pepper Chopped
  • 1/2 Cup Mushrooms Chopped
  • 1 Cup Spinach Chopped
  • 1/3 Cup Ham
  • 1/3 Cup American Cheese Shredded
  • 1 Tablespoon Garlic Powder
  • Salt and Pepper to Taste

Instructions
 

  • Preheat oven to 350 degrees fahrenheit.
  • Heavily spray a cupcake pan. Set aside.
  • Chop your bell peppers, mushrooms, spinach, and ham. Set aside.
  • In a large bowl whisk together the eggs, egg whites, and milk.
  • Add in chopped bell peppers, mushrooms, spinach, ham, cheese, garlic powder, and salt & pepper. Mix thoroughly.
  • Pour into cupcake pan until wells are 3/4 of the way full.
  • Bake 22-25 minutes. Remove from oven and allow to mostly cool.
  • Run a knife along the edges to ensure a smooth removal. Enjoy!

Notes

  • Store extras in an airtight container in the refrigerator.
  • Freeze any extras for future use.
