Mum's New Chai-spice Apple Hand Pies

Hello reader! Today's Recipe is for Chai-spice Apple Hand Pies! I am pretty excited to share this recipe with you. So I actually do not care for apples. Neither have I really enjoyed apple pies (I know, I know...blasphemous...un-American even). Apple pies have always been too sweet and mushy for me. Mum however loves apple pies. She especially loved a particular fast-food apple pie that we will not name. Lol. So we thought to give the humble apple pie, an Indian spin by adding chai-spice or chai-masala to the filling. These Chai-Spice Apple Hand Pies are so tasty with a crispy, flakey crust filled with tender apples and notes of cardamom, ginger and cinnamon. It is so good, not overly sweet at all and has definitely made me an apple pie believer. As a big plus, the house starts to smell like apple pie, and fall and Thanksgiving and makes everything feel so cozy. Happy Heart.

So onto the Chai-Spice Apple Hand Pie recipe. Yes, I know. This is what I like to do apparently. Create fusion recipes that no one asked for. Hehehe. Super fun for me though :D. We used store-bought Pie Crust for convenience but you can certainly make your own. First, we have to thaw out the pie crust. While it is thawing we prepare the filling which is a mix of diced apples (we just used red gala apples), chai-spice, sugar and a pinch of salt. Let this cook on low heat for about 8-10 minutes until the apple is tender but not disintegrated.

By this time, it is already smelling like apple pie in the house. Once filling is cooked, let it cool for a bit. In the meantime, the pie crust should be ready.

Preheat oven to 375 degrees Fahrenheit. We used the pie crust as is and did not roll it out more. So from 1 pie crust, we made 4 hand pies. We also used the leftover pie crust pieces to make another round and made more hand pies out of that. Use a cookie cutter that is about 4 inches in diameter or whichever shape that you like. Add about 1 tbsp of apple pie filling to each round. Do not use a heaping tbsp of filling. Carefully fold over each round to form a semi-circle. Seal edges gently with fingers. You can also brush the edges with water to help seal the edges but it is not necessary. Make 2-3 slits on top for venting (which I forgot to do). Crimp the edges with a fork. Brush with a milk or egg wash and sprinkle on sugar. Place pies on a baking tray.

Bake at 375 degrees Fahrenheit for 20 to 30 minutes or until crust is golden brown and cooked. I noticed that the edges tend to brown more quickly than the tops so that is something to look out for.

Once the pies are baked, let them cool on a wire rack as the filling will be too hot to eat. Then serve warm with maybe some ice-cream as an after-dinner dessert or as an after-school or teatime snack! These chai-spice apple hand pies are so good!

Recipe

Prep time 60-90 minutes

Cook time 8-10 minutes

Bake time 20-30 minutes

Serves 10

Ingredients

4 small apples diced

1/3 cup sugar

1 tsp chai spice*

Pinch of salt

2 rounds store-bought pie crust thawed**

2 tbsp milk for milk wash

1 tbsp sugar for dusting/coating

Method

  1. **If using store-bought pie crust, start thawing at room temperature for about 60-90 minutes or use recommendations on the package.
  2. Wash, peel, core and dice apples. Medium dice should be fine.
  3. On low heat, add apples, sugar, chai-spice and pinch of salt to the pot. Stir and mix well.
  4. Let apples cook down for about 8-10 minutes. Do not let the apples get mushy. They should still maintain their shape but be cooked through.
  5. Let filling cool.
  6. Preheat oven to 375 degrees Fahrenheit.
  7. ***In the meantime, roll out 1 pie crust carefully. Cut out circles about 4 inches in diameter or whichever shape you like for hand pies.
  8. Add 1 tbsp of filling to the center of the circle. Do not add a heaping tablespoon as this will overfill the pie.
  9. Fold over pie crust carefully to make a semi-circle and seal the edges carefully with your fingers. You can brush the edges around the filling with some water to help with this but it can be done without water as well.
  10. Crimp sealed edges with a fork. Make 2-3 slits on top for venting.
  11. Brush each pie with either milk or egg wash. I prefer milk wash.
  12. Sprinkle extra sugar on top.
  13. Bake at 375 degrees Fahrenheit for 20 to 30 minutes or until crust is golden brown and cooked.
  14. Allow to cool slightly before enjoying as filling will be quite hot!

* We used our own chai masala or chai-spice for this recipe. You can purchase this from the store or use many great recipes available online.

**I used Pillsbury frozen pie crust for this recipe. One package includes two crusts.

***For this recipe, 2 crust rounds made 8 pies and then we rolled out leftover pie crust pieces into another round and made 2 more hand pies.
