In this recipe, juicy chicken is coated in a creamy sauce infused with herbs such as bay leaf and coriander. Placed between fresh bread and some crunchy lettuce, the sandwich makes for the most appetizing meal!

  • Mango chutney: Buy a jar online, but it’s also simple to make at home.

  • Fresh coriander: From the nearest supermarket.

Variations & Substitutions

  • Depending on the curry powder you use, your coronation sauce may or may not be tinted orange/yellow. However, since that is what the traditional recipe looks like, adding a teaspoon of turmeric (an Indian spice) will give it an orange colour.
  • Suppose you’re a bit health-conscious and don’t want to use too much mayonnaise. In this case, you can put part yoghurt and part mayonnaise for this into the coronation sauce to give it the same consistency.
  • In the case that you can’t find Indian curry powder, you can use red Thai curry powder, or paste can also be used. They’re both made from similar herbs and spices!
  • If you’re a veggie lover, don’t be afraid to fill this sandwich with vegetables of your choice. We personally love the crunch red onions, spring onions, and tomatoes added to any sandwich.
  • If you like your curry sauce a little more cooked, toss the coronation filling in olive oil and garlic before you put it between some toasted bread.
  • You can substitute the skinless chicken breasts for chicken thighs or tofu.
  • If mango chutney is unavailable, you can substitute it with apricot jam or other fruit chutneys.

How To Make Coronation Chicken Sandwich?

Before assembling the sandwich, ensure you get all the ingredients ready on your kitchen counter.

First Step - Prepping the chicken

Now, the first thing we want to do is get the chicken ready. Bring the water to a boil in a large pot, and then add the chicken and bay leaves.

Then, cook for 10 to 12 minutes or until the chicken is fully cooked. Then, take the chicken out of the pot, drain it, and cut it into small pieces. Cut the pieces to the size you’d prefer the chunks to be in your sandwich. Set these chicken pieces aside for later (photo 1 & 2).

Second Step - Making the Coronation Sauce

Next, we’ll be making the coronation sauce. Take a large bowl. We will be adding the chicken pieces to this bowl eventually, so make sure it’s big enough to store the entire chicken filling.

Mix the mango chutney, mayonnaise, dried apricots, lemon juice, coriander, and curry powder in this large bowl. Mix all these ingredients well together. This is our coronation sauce (photo 3 & 4).

Third Step - Assembling the sandwich

Now, take the chicken pieces we had set aside earlier and toss them in this coronation sauce until they are well coated (photo 5 & 6).

Finally, spread the chicken filling on a slice of bread, top with lettuce, and then with another piece of bread. Slice the sandwich in half, and that’s it (photo 7).

Your Coronation Chicken Sandwiches are ready to be served! These might just be the most exotic and flavorsome sandwiches you’ve ever made.

Store Or Freeze For Later!

You should skip storing the bread. However, you can store the coronation chicken filling for later. Just seal it in a nice air-tight container and plop it in the fridge, where it will last a good 2 days.

If you’d like to store it for longer, pack the chicken filling in the same air-tight container and place it in the freezer. In the freezer, it should last up to 2 months. Just transfer the container from the freezer to the fridge a day before you’d like to serve it.

I don’t have bay leaves. What should I do?

Dried bay leaves are commonly found in the spice aisle of Indian grocery stores. Still, if you cannot find it, then you can use Thyme or Rosemary as a replacement. If you can’t get your hands on any similar herb, it is okay to skip this ingredient altogether.

How did coronation chicken come to be?

The coronation of 1953 was attended by a few hundred people. However, the kitchen was too small to produce anything hot besides tea, coffee or soup. Thus, coronation chicken was a dry and cold twist to what otherwise resembles more of an Indian curry. This coronation chicken was served with rice and a salad. This turned out to be an easy yet memorable recipe for such a grand historic event.

Ingredients

Instructions
