This one pan chili chicken fajitas recipe is a delicious, spicy and easy-to-make dish. It is made with chicken breasts and loaded with vegetables and cheese with flavourful seasonings.

The following ingredients are necessary for making This chicken recipe.

  • Chicken breasts: Boneless and skinless.
  • Bell Peppers: Any color you like or use different colors.
  • Onion: I used white onion.
  • Tomatoes: This recipe calls for caned chopped tomatoes; you can use fresh tomatoes if you want.
  • Zucchini: This recipe calls for shredded zucchini; however, you can use carrots instead.
  • Cheddar cheese: Use mature cheddar cheese for best flavor.
  • Mozzarella cheese
  • Seasonings: Dried basil, chilli powder, Chinese 5 spices, salt and black pepper.

  • For extra heat, add ½ teaspoon of cayenne pepper or chopped chili pepper.
  • You may also use red pepper flakes instead of regular chili powder.
  • For extra flavor add some lime zest or lime juice.
  • Add 1 teaspoon of store-bought or homemade fajita seasoning or Italian seasoning.
  • If you don't like to add zucchini, you can replace it with any other veggies, such as spinach.
  • You may add some chopped mushrooms.
  • If you don't like it spicy, skip the chilli powder or replace it with some paprika.

How to Make One Pan Chili Chicken Fajitas

One: Cut the chicken breasts into thin strips and slice the peppers and onion into strips as well. Heat the oil in a large skillet over medium-high heat, add the onion and the pepper slices and saute until tender (photo 1 & 2).

Two: Add the shredded zucchini and stir (photo 3).

Three: Add the chicken, all the seasonings, tomato and some water if needed. and stir (photo 4).

Four: Leave it to simmer for about 20 minutes (photo 5 & 6).

Five: Add half of the cheese and turn off the heat.

Six: Garnish with some fresh parsley (optional) and the rest of the cheese and serve warm.

  • The secret of a delicious chicken recipe is the seasoning I add along with the cheese. So, don't skip any of them.
  • If you don't like zucchini, don't worry; you will not taste the zucchini in this dish.
  • You can make steak fajitas by using steak instead of chicken breast. In this case, I suggest using flank steak for the best results.

You can add any vegetables you like. However, here are some suggestions: Zucchini, jalapenos, tomatoes, bell pepper, spinach, shredded cabbage, coriander, parsley and green beans.
