Sugar Free Lemon Cookies Recipe

These sugar free lemon cookies are soft, lemony and easy to make. They are diabetic friendly and keto friendly. Made with fresh lemon juice and zest, almond flour and coconut flour and will be ready in less than 30 minutes.

  • Erythritol: You can use any other sweetener.
  • Baking soda
  • Fresh lemon juice and zest
  • Butter: Melted.

How To Make Sugar Free Lemon Cookies

One: Preheat the oven to 180C/ 356F and line a baking tray with parchment paper.

Two: In a large bowl, mix almond flour, coconut flour, baking soda and Erythritol.

Three: Add in lemon juice and melted butter, and mix everything until combined.

Four: Refrigerate the cookie dough for 15-20 minutes.

Five: Scoop small balls, roll each ball in your hand, press lightly on it, then place them on the baking sheet.

Six: Bake for 15-20 minutes. Remove from the oven and allow to cool for 20 minutes on a cooling rack. Sprinkle lemon zest on top and serve.
