K-Drama Food Recipe Series: Japchae from Reply 1994

C’on tell me who is not into K-Dramas these days? Lol! I know some, but just in case you know people who are not in k-dramas I guess it’s all right.

I’ve been watching a lot of KD’s and I always get intrigued by the food they eat! So last weekend I made my version of Japchae, or you can also pronounce it as chapchea, whichever is right. I first saw it from Reply 1994 series. Have you watched it? They say it’s pretty good series.

Apparently Japchae is very popular Korean dish. It’s one of the most sought after dish during festive season specially New Year’s day, just like our birthday pancit here in PH! It’s mixed vegetables with soy sauce, the only difference is it uses a generous amount of sesame oil and its type of noodles. If we are going to make our pancit, we use canton or bihon however Japchae uses Korean Glass noodles, it’s thicker and chewier, pretty interesting texture since we Filipinos are not used to this type of noodles.

I bought the noodles from SM Hypermarket, they carry different brands but of course I choose the cheapest among others and it seems like it’s pretty fine.

For this recipe let it be known that I included onions which worth gold these days. I still feel bad that I have to pay P30 each onion but hey, hello… department of agriculture!

LOL!

Anyway, this recipe you need to adjust the soy sauce, pepper, and sesame oil to your taste. SO feel free to add more even before serving.

If you want a shortcut for this recipe all you need to do is never skip the marinating portion of the beef, you can stir fry all the ingredients in one pot and that’s fine.

Easy Japchae Recipe – Korean Glass Noodle Stir Fry

Easy, very tasty, not sweet, but very savoury dish of seasoned glass noodles mixed with assorted vegetables and meat. This is one of the most popular dishes in Korea! I didn't use sugar as the original recipe require and I used our local Kangkong to give it a more Filipino feel. This dish was inspired by The Reply 1994 series!

Cook Time 45 minutes

Ingredients

  • 1/4 kg beef fillet, cut into strips, marinated in 2 tbsp sesame oil, 3 tbsp soy sauce, 1 cloves garlic, ground pepper
  • 2-3 tbsp shiitake mushroom
  • 2 tbsp toasted sesame seeds
  • 4 ounces spinache, or any green leafy vegetables (for this recipe I used Kangkong)
  • 4 ounces Vermicelli (sweet potato starch noodles)
  • 2 medium sized thinly sliced
  • 1 medium carrot, cut into matchsticks
  • 1 medium red pepper, cut into strips
  • 1 pinch pepper and salt to taste

Instructions

Prepare the beef

  • Put the beef and shiitake mushrooms into a bowl and mix with 1 clove of minced 3 teaspoons soy sauce, and 1 teaspoon of toasted sesame. Cover and keep it in the fridge.

Prepare the noodles and vegetables

  • Bring a large pot of water to a boil. Add the spinach or any green leafy vegetable and blanch for 30 seconds to 1 minute, then take it out with a slotted spoon or strainer.
    2. Rinse the spinach in cold water to stop it from cooking. Squeeze it with your hands to remove any excess water. Cut it a few times and put it into a bowl. Mix with 1 teaspoon soy sauce and 1 teaspoon toasted sesame oil. Put it into a large mixing bowl.
    3. Put the noodles into the boiling water, cover and cook for 1 minute. Stir them with a wooden spoon so they don’t stick together. Cover and keep cooking for another 7 minutes until the noodles are soft and chewy.Strain and cut them a few times with kitchen scissors. Put the noodles into the large bowl next to the spinach. Add 2 teaspoons toasted sesame oil, 1 teaspoon soy sauce. Mix well by hand or a wooden spoon. This process will season the noodles and also keep the noodles from sticking to each other.
    4. Heat up a skillet over medium high heat. Add 2 Teaspoons Vegetable Oil with the onion, and a pinch of salt. Stir-fry about 2 minutes until the onion looks a little translucent. Transfer to the noodle bowl.
    5. Heat up the skillet again and add 2 teaspoons vegetable oil. Stir-fry for 2 minutes until softened and a little juicy. Transfer to the noodle bowl.Heat up the skillet and add 1 teaspoon vegetable oil. Add the carrot and stir-fry for 20 seconds. Add the red bell pepper strips and stir-fry another 20 seconds. Transfer to the noodle bowl.Heat up the skillet and add 2 teaspoons vegetable oil. Add the beef and mushroom mixture and stir fry for a few minutes until the beef is no longer pink and the mushrooms are softened and shiny. Transfer to the noodle bowl.

Make the egg garnish

  • Crack the egg and separate the egg yolk from the egg white. Beat in a pinch of salt with a fork. Add 1 teaspoon of vegetable oil to a heated nonstick pan. Let it cook using the remaining heat in the pan for about 1 minute. Flip it over and let it sit on the pan for 1 more minute. Cut into strips and top it on your noodles.

Mix all the ingredients together and serve!

  • Adjust taste by adding more sesame oil, pepper and salt when served.
