Fibre is found in unrefined carbohydrate foods, such as wholemeal flour and bread, oats, fruits and vegetables, beans and lentils. It is essential in our diets because it aids digestion and helps to prevent constipation and other bowel disorders. Fibre gives a prolonged feeling of fullness which can help to prevent overeating and consequent weight gain. A high fibre diet has also been associated with a lower risk of heart disease, type 2 diabetes and some cancers.

Gluten Free Blueberry Porridge Scones

Nutritious and delicious Gluten free porridge scones packed with fresh blueberries.

Ingredients

  • 200 g gluten free porridge oats
  • 40 g butter at room temperature
  • 2 tbsp caster sugar
  • 1 tsp salt
  • 1 tsp bread soda ensure gluten free
  • 250 ml natural yoghurt
  • 1 egg
  • 125 g blueberries

Instructions

  • Preheat the oven to 160°C.
  • Line a muffin tin with muffin cases (6).
  • Add the gluten free porridge oats, sugar, bread soda and table salt to a large mixing bowl. Stir to combine.
  • Rub the butter into the oat mixture, then add the yoghurt and the egg. Stir until well combined.
  • Use an ice cream scoop to fill the mixture evenly between the 6 muffin cases.
  • Bake for 25-30 minutes.
  • Remove from the oven and cool on a wire rack.
