This salad originated from Shiraz, a city located in the southwest of Iran. Complete your dinner or lunch table with this super easy and crisp cucumber and tomato salad. It’s the kind of salad I can never get enough of! Fresh and vibrantly colored! The dressing is so light and simple, with just a few ingredients. Fresh lime juice and a splash of olive oil. A pinch of salt and black pepper will complete it perfectly.

What You Need to Make Salad Shirazi

Cucumber, tomato, and onion are the basic ingredients you need to make this salad. Perhaps the simplicity of preparation has made this salad one of the most popular Iranian salads. There are various options for seasoning this salad. Lemon juice, unripe grape juice (ab-ghooreh), olive oil, and vinegar, or a combination of any of them plus a little salt and mint will complete your delicious salad.

  • Cucumbers: For making salad Shirazi you should opt for thin-skinned, crispy, and fresh Persian cucumbers. If Persian cucumbers are not available, you can opt for English cucumbers. These cucumbers are almost seedless and crunchy, but they are more watery than Persian cucumbers. If cucumbers have nice thin skin, you don’t have to peel them, but usually, in Iran, cucumbers are peeled to make Shirazi salad.
  • Tomatoes: The second important item of this salad is tomato. Use ripe but firm tomatoes because we are going to chop the cucumbers and tomatoes very finely and evenly.
  • Onion: Raw onions can add a nice crunchy texture to salads. If you do not have enough time to chop the ingredients or you do not like the taste of onions in salads, you can ignore them, but I must say that the classic Shirazi salad is not complete without onions. I usually use red onions for salads, but you can also use yellow or white onions.
  • Salt and black pepper: The spice of this salad is just salt and a little black pepper.
  • Salad dressing: The dressing for this salad can be just lemon juice, unripe grape juice, or a combination of olive oil and vinegar or lemon juice and olive oil. Usually, mayonnaise is not added to this salad dressing, but if you like creamy salad dressings, you can also use a little mayonnaise.
  • Herbs: The best option for this salad is to use a little ground dried mint, but if you do not have it available, you can chop some fresh mint leaves or fresh parsley and sprinkle it on the salad.

How to Make Salad Shirazi Like a Pro?

  • Use fresh, firm, and thin skin cucumbers and tomatoes for an eye-catching and appetizing salad. You can also dice cucumbers with peel.
  • Using a sharp knife, dice cucumbers, tomatoes, and onion evenly into small cubes.

Ingredients

  • 3 small Persian cucumbers or 1 English cucumber, unpeeled
  • 3 ripe, firm Roma tomatoes
  • ¼ medium red onion
  • Dressing
  • ⅓ tablespoon kosher salt
  • ¼ tablespoon freshly ground black pepper
  • 3 tablespoon fresh squeezed lime or lemon juice (about one medium lime)
  • 2 tablespoon olive oil

Instructions

Step 1

Dice the cucumbers, tomatoes, and red onion into small cubes. Add to a medium bowl.

Step 2
In a small bowl use a whisk to combine the lime juice, salt, and olive oil. Add to the salad ingredients. Toss gently and serve immediately.
