This recipe for blueberry syrup comes together in less than 15 minutes and will transform 1 cup of regular ol’ blueberries into your new favorite sauce! It’s irresistible. You can also strain the syrup to create a blueberry simple syrup for cocktails and drinks.

How To Make Blueberry Syrup

Don’t let the show stopping taste of blueberry syrup fool you, it couldn’t be easier to make in your kitchen at home. To make blueberry syrup you only need blueberries, water, and sugar. You can amp up the flavor by adding some citrus juice or zest, vanilla extract, or almond extract but even with the basics blueberry syrup is sure to impress!

Alright! Here are the steps to make blueberry syrup:

  1. Rinse the blueberries and remove any spoiled berries or stems. Add to a small pot with sugar and water.
  2. Warm the mixture and bring to a simmer. Reduce heat to low and simmer for 5-10 minutes to thicken, stirring occasionally. You don’t have to stir non-stop but do keep a close eye on the mixture so it doesn’t bubble over!
  3. Pat yourself on the back for making something delicious that your entire family will love!

During the first few minutes of cooking it will appear as though there isn’t enough liquid and the blueberries will be very firm. After simmering for 5-10 minutes the blueberries will burst and breakdown into the sauce.

You can puree the syrup or strain it for a silky syrup but it is wonderful as is. This will keep for 1-2 weeks in the fridge or for 3-6 months in the freezer!

Blueberry Pancake Syrup!

A warm stack of pancakes covered in butter and fresh blueberry syrup is how most of us learn about this colorful fruity syrup. The recipe you’ve got in front of you works phenomenally as a blueberry pancake syrup: It’s sweet, it’s loaded with berry flavor, and it’s oh so pourable!

This syrup will thicken slightly in the fridge as it cools because blueberries have pectin, which is a natural gel/ thickener present in many fruits. We find that once it’s refrigerated overnight the syrup is the right consistency for pancakes and waffles.

BUT! If you know you want a thicker syrup, try adding 2 teaspoons of lemon juice. The acid from the lemon juice helps set the gel in the pectin. We’re going Bill Nye on this project, guys!

You can also simmer this for longer to thicken it, a gentle simmer for 15-20 minutes will significantly thicken the syrup. Watch it closely as it will reduce quickly!

How To Use Homemade Blueberry Syrup

You’ve got a homemade batch of blueberry syrup in your hot little hands, now what to do with it? Fruit syrups can be used in many yummy ways at home.

We all know blueberry syrup works great as a pancake and waffle syrup, here our some more ways we use it at home:

  • Pour over yogurt, oatmeal, or granola breakfast bowls
  • Add to smoothies, iced tea, or iced coffee to sweeten
  • Use in homemade ice cream or popsicles.
  • Make homemade blueberry granola and use this syrup as the sweetener
  • Mix with powdered sugar to make blueberry icing for donuts, scones, or muffins– OMG it’s good!
  • Toss a few tablespoons in with your favorite salad dressing or use to make your own dressing
  • You can even use leftover syrup to marinate protein for grilling!
  • Make flavored lemonade
  • Toss with fresh fruit for a tasty fruit salad

To make a silky smooth blueberry simple syrup simply strain the mixture through a sieve or mesh strainer after simmering to catch all the blueberries.   3. To make this sauce thicker, you can add 1-2 teaspoons of lemon juice* or simmer for an additional 5 minutes! The blueberry syrup will thicken as it cools in the fridge.
  4. Store in a sealed container in the fridge and enjoy!

Notes

If using frozen blueberries allow them to defrost for 4 hours prior to making this syrup.

Blueberry syrup will have a thicker consistency after cooling in the fridge for 4-6 hours. 

*Blueberry syrup naturally thickens as blueberries have pectin. For a thicker syrup, you can add 2-3 teaspoons of lemon juice to increase the jelling properties of said pectin!

This syrup lasts 1-2 weeks in the fridge and 3-6 months in the freezer.
