Chicken jalfrezi

Jalfrezi is a familiar name on the list of Indian restaurants. It can be made with meat other than bird – or even a vegetarian version. It’s always particularly good.

Ingredients for four

500g Chicken breast fillets or other meat 1 large onion 2 tbsp butter or clarified butter if you prefer;1 teaspoon cinnamon 1 teaspoon sugar 1 teaspoon salt 2 different types of bell peppers 1 teaspoon good quality tomato puree or 5 tomatoes (if in season) Unflavoured yoghurt for garnish Fresh coriander Slice the onion and peppers. Peel and chop the garlic and grate the ginger. Chop the chicken. Put the butter in a large pan or casserole. Add the garlic and ginger and onion puree. Sauté for a while. When the onion softens, whisk in all the seasoning. Stir well. In a hot pan, bring the spices to life. Add butter or cooking oil if it gets too thick. Then add the chicken and fry for a while to cover the surfaces. Spoon the tomato paste or diced tomatoes into the pan along with the peppers. Fry the jalfrezi until the chicken is cooked and serve. Garnish with yoghurt and coriander leaves.
