Galgan Soup

A recipe from Vietnam. Chicken broth cooked with sliced galbanum and other Ingredients with shiitake mushroom insert.

Ingredients:

For the broth: 1 l water 6 pcs makrut (lemon leaves) 4 pcs thick base of fragrance (Cymbopogon citratus grass) 2 pcs chilli peppers 1 pcs coarsely skinned chicken carcass 1 k 12 cm large, peeled galgan 1 pk onion freshly ground pepper salt Other Ingredients: 125 g shiitake mushroom 125 ml dense coconut milk 4 tbsp lemon juice 1 tbsp fish sauce

Procedure:

1. First, make a broth with Chicken Carcass, coarsely pounded, mashed fragrance base, sliced galganum, coarsely chopped onion and other ingredients mentioned above
2. Strain the thoroughly boiled stock (boil for 30-40 minutes) through a cloth
3. Heat it in a saucepan, add the finely chopped meat picked from the chicken carcass, fish sauce and lemon juice, simmer for 5 minutes
4. Finally, add the shiitake mushrooms, simmer for another 3 minutes, remove from heat and pour in the thick coconut milk
5. Season the soup with salt and pepper if necessary and serve immediately.
