Healthy snack in a box. This recipe makes a sandwich with slices of wholemeal toasted bread, hand-mixed Peanut Butter and fruit or fruit jam. To accompany the toast, add cucumber slices, pepper strips and the flesh of a quarter of a grapefruit to the box.
Ingredients:
For 4 servings:
160 g
unsalted peanuts

1 pinch (3 g)
salt
8 slices (160 g)
whole wheat toasted bread
For garnish:
(approx. 170 g total)
fruits: blueberries, banana, nectarines or peaches, or peaches. Fruit jam
We will replenish each serving:
1/4 pcs
salad cucumbers
1/4 pcs

yellow bell peppers
1/4 pcs
of grapefruit
Procedure:
Prepare the peanut butter very simply. Just roast the peanuts in a pan until golden brown (no fat needed) and blend them with a tiny pinch of salt (less is more here) until smooth. You need to have a really powerful blender so you don’t completely cook them when you blend them honestly. Butter is best in the fridge.
For a snack, make a sandwich by spreading a slice of toast with peanut butter. Arrange fruit to taste – banana or blueberries are excellent. A variation with some homemade jam (ideally currants) is also excellent. Cover the other part of the sandwich and the snack is ready.
Pack the box with a piece of salad cucumber, bell pepper and a quarter of a grapefruit.
