Baked pork belly with braised cabbage, boiled potatoes

Belly roasted in the oven in a roasting tin with water until golden brown, served sliced together with braised cabbage and boiled Potatoes.

Ingredients:

1-1.5 kg of pork belly 6 pcs garlic cloves 2 pcs larger onions water cumin Pepper Salt For braised cabbage: 1 piece medium sized cabbage 2 pcs carrots 400 g of whole English bacon 1 tbsp/td> sunflower oil 200 ml chicken stock a few drops of white wine vinegar/td> a pinch of cane sugar ground black pepper salt For boiled potatoes: 500 g potatoes

Procedure:

  • Cube the peeled onion and rub half of the peeled garlic cloves with salt, slice the remaining cloves
  • Rinse the cleaned pork belly, dry it, cut the pork belly skin into squares with a knife and rub the garlic rubbed with salt into the skin and meat
  • Place the meat in a baking dish skin side down, sprinkle with chopped onion, cumin, remaining garlic, season with pepper and pour a little water
  • Place in a preheated oven and bake covered at 160 °C for about 2.5 hours, turning occasionally, basting with water and pouring over the fat
  • Turn the pork belly skin side up at the end of baking, uncover, finish baking until tender and crispy.
  • Preparation of braised cabbage:

  • In a larger pot, sauté sliced Italian pancetta or Czech English bacon in hot oil

  • Potato preparation:

  • Wash the potatoes, peel and cut into larger cubes, rinse them thoroughly again, then drain thoroughly
  • Sauce the potatoes in a large bowl.Put the drained potatoes in a pot and pour cold water over them
  • Salt the water, season with cumin and boil for about 15 minutes until the potatoes are soft, then drain the water and serve.
