Paprika Hermelin with Tuscan Chutney

Family, friends, sandwiches and a New Year’s toast. Is your New Year’s Eve still the same and missing something new? If so, instead of boring sandwiches and one-offs, try a homemade Chutney full of Christmas spices infused with Hermelin.

Ingredients:

Rule for 4 servings: 4 pcs Hermelines King Cheese Breadcrumbs roasted almonds for garnish Cabernet Sauvignon wine Begeta, a savory thick stick to snack on For a Tuscan chutney: 4 pieces of sun-dried tomatoes 4 pieces red onion 1 pk whole garlic 50 g cane sugar 50 g butter 20 g grated ginger 30 ml balsamic vinegar/syrup 20 ml red wine vinegar 20 ml water 1 tbsp oil 1 tsp mustard seed chilli pepper rosemary seeds pepper salt

Procedure:

  • In a medium saucepan melt the butter with the oil, add the whole garlic and let it infuse in the oil for a few minutes, then remove
  • Add the onion cut into fine strips and the sugar to the garlic oil and let it caramelize for 15 minutes
  • .Gradually add the wine vinegar, balsamic vinegar and pour a little water into the mixture, cook for another 10 minutes, add fresh ginger to taste chilli, pepper, salt, mustard seed, a few sprigs of rosemary and 2 sun-dried tomatoes, the remaining tomatoes can be used for garnish

  • Tuscan chutney is best served with King of Cheeses Hermelin, roasted almonds and Cabernet Sauvignon wine.
