A quick dessert of Apricot Compote, flavoured white yoghurt and mixed nuts.

Procedure:
1. Cut the apricots crosswise on the skin, put them in boiling water for a few seconds, remove them, cool and peel them, then cut them in half, drain and cut them into cubes
2. In a saucepan, bring water to the boil with finely grated lemon zest and lemon juice, sugar, vanilla sugar and cinnamon, put the apricots, cover, boil briefly (be careful not to boil the apricots), then remove the cinnamon and let the compote cool
3. In the meantime, whisk the yoghurt and vanilla sugar together in a bowl
4. Place a layer of finely chopped hazelnut mixture, apricot compote and yoghurt in a dessert glass, finish with a layer of hazelnuts and serve.
Recommendation:
Instead of apricots, you can use stewed apples, peaches or pears.
