Punch cuts are very popular with us and we make them very often. This kind of cake is suitable for Christmas, weddings, parties and others.

Dough preparation: Beat the eggs with granulated sugar, add flour with baking powder, add a tablespoon of water and a tablespoon of oil. I also Add Punch Flavouring to each. Spread the batter on a baking sheet lined with parchment paper and bake. Bake at 180°C for 15 – 20 minutes. Bake all 3 doughs in this way. Add red food colouring to the last dough (the third) for appearance

Prepare the brew: boil 400ml water + 200g granulated sugar in a saucepan on the stove, add about 1dl rum to the cooled (I can add a little more) and add a little rum and punch flavouring.

Make the icing: Mix the sifted icing sugar with 8 tbsp hot water and add a little food colouring pink. Depending on what color frosting you want, you may want it dark or pale. That’s up to you 🙂 I can also add punch flavouring.

Finalization: After baking, flip the dough, remove the ash paper and brush with jam. Preferably apricot. Attach the second sheet of pastry (the pink one). Pour the rum mixture evenly over all 3 slices. Also spread with jam. Attach the third slice and baste. Lay all the sheets on top of each other on a baking tray and weight them down with, for example, three cartons of milk. After 3 hours, pour the icing over the cake. After the icing has set, you can trim off the edges that are less juicy and ugly.
