Leavening sourdough rolls

100 g sugar 500 g plain flour (ideally T650) 200 ml water or milk (quantity according to desired consistency) 1 cup sour cream 1 pk egg 150 g Lievito madre (2 pl rye Sourdough starter) jam for filling

From the ingredients, make a classic Sourdough Dough. This is a sourdough dough, so let it rise for about 3 hours.

After the dough has risen, put it on a work surface and divide it into about 2 parts. Roll each part into a circle, then cut it into 8 parts to make rolls.

Fill with jam and roll into rolls. Place on a baking tray and leave to rise for about 2 hours until doubled in volume. Once baked, brush with egg wash and place in a preheated oven at 180 degrees. Bake for approximately 45 minutes.

4.

While still warm, sprinkle with icing sugar.
