Popsicle cuts

ingredients

5 pcs egg 200 g fine granulated Sugar 10 tbsp cold brewed black coffee 200 g semi-coarse flour 1 pk Baking powder Dr.Oetker 100 g ground walnuts

500 ml milk 60 g Golden cob Dr.Oetker 200 g powdered sugar 1 pk vanilla sugar Dr.Oetker 250 g butter 1 KL um

Legendary Popsicle Cuts remind me of my childhood, my mom used to bake them for us when we were kids, it was always on our name day or birthday, to celebrate. We had nuts in the garden, we would gather them together so they would be in stock for the whole year. Then we would crack them and “help” in the baking, whether it was sour cakes, cakes, cakes. It was a joy, we enjoyed those moments together. Now, after a long time, I remembered the recipe and I can say that everyone liked the cakes.

Cesto: in a bowl beat egg whites with a pinch of salt, add sugar by spoonfuls, whisk in egg yolks one by one, 10 tbsp of cold brewed strained black coffee, gently stir in sifted flour mixed with baking powder and ground nuts.

Bake in a deep baking pan on baking paper, size 25×35 cm. Temperature 180°C for 20 minutes or as required. Separate the baked dough from the sides of the baking tray with the paper, then it is baked. Test for doneness with a skewer. The figures are approximate. Let cool and remove the paper.

Filling. Boil a thick pudding and leave it to cool under cling film.

Beat the room temperature butter with the icing sugar. Beat in the cooled custard and um in batches.

Remove the top crust from the baked pastry. I like to turn the dough out onto a board, paper side up. Then it goes on very easily. Brush the dough with apricot jam, spread the filling and top with the chocolate glaze. I usually sprinkle the dough with a little more brewed, cooled coffee. Refrigerate and cut into slices with a hot knife.

Chocolate glaze: break the chocolate into pieces, add the ceria and melt in a water bath, stirring constantly.
