Soup of many flavours

Soup of peppers, onions, zucchini, Tomatoes, potatoes, corn, boiled pasta, spices and herbs.

Ingredients:

1600 ml of vegetable stock 400 g of potatoes 350 g of potatoes/td> canned tomatoes 300 g sugars/td>150 g corn kernels 100 g fresh fennel 50 g semolina pasta 1 piece red peppers/td>1 pk yellow peppers 1 pc spring onions 1 pc chillies 1 pc carrots 1 pcs lime 1 pcs red onion 1 tsp ground sweet paprika/td>1 tbsp tomato paste parsley sprigs ground pepper oregano sugar salt/td> water

Procedure:

1. Cut the cleaned carrots into rounds, cut the cleaned peppers and chilli pepper into noodles, chop the peeled onion and spring onion finely, drain the tinned tomatoes and cut them into smaller pieces
2. Pour half a litre of water into the pot, put in the prepared Vegetable Recipes, sprinkle with the juice of half a lime and boil for 10 minutes, then add the peeled, diced potatoes with fennel, the zucchini cut into smaller pieces and finally the corn
3. Pour in the vegetable stock, cook for about 15 minutes and in the meantime cook the soup pasta in boiling salted water according to the instructions on the packaging
4. Pour 3 scoops of cooked Vegetable Recipes into the blender, add the ground paprika, tomato paste, juice from the other half of the lime and blend everything well
5. Pour the finely blended vegetable mixture back into the pot, season with salt, pepper, sugar, oregano, boil the soup gently for 10 minutes, finally add the cooked, drained pasta and sprinkle each serving with finely chopped parsley.

Recommendation:

Instead of canned tomatoes, fresh, steamed and peeled tomatoes can be used.
