Salad cake is one of the best inventions of our time. Now you can eat it with a clear conscience!
Ingredients for four
100g lettuce 200g unflavoured cream cheese 1 large pickled cucumber 1 apple 1 small piece of leek or spring onion;2 dl cottage cheese 1/2 tsp salt
Base
200g dry bread (island bread is a good choice) 50g melted Butter
Tip: The meatiness of the salad cake can be added with extra slices of sausage or ham. With the toppings, you’re only limited by your imagination anyway.
Melt the butter on the bottom. Use a butter knife to cut the butter into crumbs. Mix the butter with the bread (in the same way as you make the biscuit base for the cheesecake) and spread evenly over the bottom of the loose pan.
Wash and slice the lettuce very thinly. Grate the pickle and apple. Cut a couple of centimetres of the white part of the leek very finely. Mix the cream cheese with the cottage cheese. Finally, mix all the ingredients into a paste, check the salt and spread the paste over the base.
Press until smooth, so that the salad cake comes away nicely from the edges. Decorate and serve immediately.
