There must be no one left in Spain, and if I hurry in the world, that in social networks has not come across a video of this tiktoktilla or, in case you are laymen in this of viral memes, Mexican Quesadilla of TikTok.

This is really nothing extraordinary. If we start from a very good dish, add a pinch of grace, plus a touch of music and a point of dancing joy, we get as a result a viral video that is played on all our cell phones and in most student kitchens in Spain.

Since man is man he has strived all his efforts to survive and the best way to accomplish this mission is putting food in our mouths. Perhaps that is why this quesadilla, so quick, versatile and easy to make, has become one of the favorite recipes of young people in our country.

Well, for that reason and because it is well known that the kitchen is used to flirt, to tame the wild beasts or to pay a happy tribute to a hungry loved one; more if possible it is a fun dish, rich and in which much imagination and the ingredients available in our pantry.

If we hear the word quesadilla, our mind takes us straight to the beautiful Mexico (although by the way, some languages say that its origin is Asturian and traveled to the New World in the form of sweet quesadiella to adapt to new ingredients and ways of cooking), where surely we have seen them in so many documentaries of street food and chingona.

The dictionary of Mexican Spanish defines quesadilla as “Corn or wheat flour tortilla folded in half, filled with various foods such as Cheese, potato, mushrooms, picadillo, chicharrón, squash blossom, etc., cooked on a comal or fried: “Prepare me a quesadilla of brains, two of squash blossom and one of cheese” .

Well, especially among young people, as brains are not very fashionable, it is best to fill it with household ingredients and, fundamentally, lots of cheese. But the concept is understandable: a grilled omelette filled with whatever you like. Knowing that there is no numerus clausus of quesadilla and that the only limit is the imagination of each one, you just have to learn to fold it like a real tiktoker and become the true king of the gastronomic mambo.

How to make a TikTok-style quesadilla

Ingredients

. Large wheat tortillas, 4 u Large roasted sweet potato, 1 u Chinese onion (or green onion green), 2 u Red chili not too hot, 1 u Raclette cheese, 400 g Smoked bacon, 16 slices

Step 1

Fry the bacon slices in a frying pan, preferably non-stick, over medium heat. The important thing is that it browns little by little, without burning, until it acquires a nice crispy texture. We turn it over until it is ready. Remove to absorbent paper.

Step 2

Cut the chives and red chili into very thin slices. Cut the raclette cheese into sticks or, if it is a cheese that does not melt so well, grate it.

Step 3

Once we have all the ingredients ready (also the roasted sweet potato), we assemble the quesadilla. To do this, the first thing to do is to simply make a cut in one radius of the tortilla and start assembling the quesadilla in the four quarters of the tortilla. It is best that, from left to right from the cut, clockwise, we mentally number our quarters because we must keep in mind that the quarters 3 and 4 (those of the half on the right) are the ones that will have more contact with the fire and, therefore, the ones that will melt more.

Step 4

Place the most raw ingredients in quarters 1 and 2, and the rest in the other quarters. Fold the quesadilla starting with quarter 1 towards quarter 2, then all of it towards quarter 3, and finally all of it towards quarter 4.

Step 5

Place the quesadilla in a non-stick skillet over medium-low heat to toast the outside and melt the cheese on the inside. It is recommended to cover it so that the heat condenses. It will take a couple of minutes or three on each side. It should be colored on the outside and tender on the inside.
