Focaccia ingredients, baking for six people
3 dl wheat flour 3 dl durum flour 1 pss dry yeast 2 tsp sugar 1 dl boiling water 1 dl cold water 1 dl sugar 1 tsp sugar 1 tsp sugar 1 tsp water 1 tsp water 1 tsp water 1 tsp water 1 tsp water 1 tsp water 1 tsp water1 dl olive oil 2 tsp salt 3 sprigs of rosemary

Mix the dry ingredients for the focaccia in a bowl. Add the cold and cold water and stir to combine. Finally, ladle in hot water to make the dough flat. Tear a few sprigs of rosemary into the bread and knead the dough with a spoon. The dough should be quite flat. Pour into a shallow dish and leave to rise under a cloth for an hour.
Heat the oven to 200°C. Press dimples into the risen focaccia dough and drizzle more olive oil over the top. Tear off the last of the rosemary leaves.
Bake the focaccia for half an hour until the surface is nicely browned.
