Tags: flour dhal dough
I had Samai Flour which my mum passed to be. Other day I wanted some quick healthy after school snacks for the kids. I saw this post which was so perfect I decided to try this out but with little millet flour instead of rice flour. Also did slight modification according to my preference. I also followed my Ammni kozhukkatai for making dough My mum made the flour by grinding the Little millet (you can do it either in blender or in flour mills) and later she has roasted till nice aroma released.
Ingredients:

Little millet Flour / Idiyappam Flour - 1 Cup
Maida - 1 tablepoon
Salt - 1/2 teaspoon
Oil  - 1 Tablepoon
Water - 1 1/2 Cup
Mustard Seeds - 1/2 teaspoon
Urad Dhal - 1 teaspoon
Chana dhal - 1/2 teaspoon
Curry Leaves - 10 to 15
Grated Coconut - 2-3 tablespoon
Dry Red chillies - 1

To dry roast and grind

Chana dhal / Bengan gram dhal - 1.5 tablespoon
Urad dhal - 1 tablespoon
Red chillies - 3

Method:

Dry roast the ingredients list under To dry roast and grind. Let it cool down
First grind Roasted chillies and dhal into little coarse powder. Keep it aside
Boil 1 1/2 cup of water, teaspoon of oil with Salt.
Reduce the flame and add the flours and mix well with spoon. Switch off the flame and leave it for 3-5 mins. Apply oil on your hand and mix the dough well. Make them in to a soft dough (Adjust water accordingly. The dough should be like smooth chapathi dough). ( I have done the flour in 2 batches)
Now, grease the palms with oil and roll the dough in to small round balls.
Steam cook it in idli cooker and once done, keep them aside.
Heat a pan and add oil.Temper with mustard seeds, Urad Dhal, Chana dal, Red chillies and curry leaves. Fry till dhal is brown.Add Grinded masala powder.

Add in cooked millet balls and mix well. Add coconut and mix well
Add cooked ball and mix it well
Serve it hot
