This fried brown rice might be as good as it gets. It’s quick and makes great use of flavorful soul food ingredients like black-eyed peas and collard greens for a great side or main dish recipe option.
Though the greens and peas are uncommon ingredients for fried Rice, they work, and work well.
I often make fried rice to make use of ingredients I need to get rid of before spoilage. This time I was just hungry and wanted to make use of whatever I had on hand.
In addition to the greens and peas, leftover smoked pulled pork takes this Fried Brown Rice to the next level.

Fried Brown Rice Ingredients
- Brown Rice (Microwave)
- Yellow Onions
- Bell Peppers
- Garlic Cloves
- Collard Greens
- Black-eyed Peas (canned)
- Smoked Pulled Pork
- Kosher Salt
- Black Pepper
- Allspice
- Paprika
- Olive Oil
- Cider Vinegar
- Worcestershire Sauce
How To Make Fried Brown Rice
Mix spices together in a small bowl.
Heat pan on medium heat. Add olive oil and then sauce pulled pork to allow the flavor to release. Stir as needed cooking for 3-4 minutes. Remove and set aside.
Add onions and saute 2 minutes. Add in garlic, peppers, and a third of the spice mix. Oil should be infused with flavor at this point.
Mix in the collard greens adding more oil if needed. Add another ⅓ of the seasoning and cook another 3-4 minutes.
Add drained peas cooking for 2 minutes mixing well. Add the meat back plus the rice plus the remaining spices. Mix all together and then let sit undisturbed 2 minutes for that crust to form.
Add vinegar and Worcestershire sauce. Mix in and then remove from heat. Enjoy.
Cooking Considerations and Tips.
Use microwave brown rice to save time. I used Uncle Ben’s ready rice. White rice works in this recipe as well. Best rice for fried rice is leftover cooked rice especially from your favorite Chinese spot.
One of the keys to this dish is adequately seasoning the oil before frying the rice. Rendering the fat and flavor from smoked pulled pork gets it started. But adding aromatics like garlic, onions, and peppers builds on that flavor. The spices just elevate things.
Drain your peas first. Liquid adds condensation which makes it difficult to get that proper crust.
Once you add the rice don’t be in a rush to stir and mix things so much. Some patients will allow the rice to fry and build that crust. Crusty fried rice is the best!
I used cider vinegar, but red wine vinegar is a good replacement.
Eat with your favorite hot sauce.
