For Armadillo eggs, prepare the seasoning by mixing salt, brown sugar, garlic powder, onion powder, and ground mustard. Add this to the cream cheese in a bowl. Add shredded cheese to it and mix. Fill this mixture in the jalapenos and wrap them in pork sausage. Wrap bacon strips around the eggs and smoke for about 2 hours.

Ingredients

  • 1 pound Pork Sausage
  • 12 slices Bacon
  • 6 Jalapenos
  • 4 ounces Cheddar Cheese (shredded)
  • 4 ounces Cream Cheese
  • 1 cup BBQ Sauce
  • 2 teaspoons Onion Powder
  • 2 teaspoons Garlic Powder
  • 1 teaspoon Ground Mustard
  • 2 teaspoons Black Pepper
  • 1 tablespoon Salt
  • 1/2 teaspoon Cayenne Pepper
  • 2 teaspoons Smoked Paprika
  • 1/4 cup Dark Brown Sugar

Instructions

  • Prepare the seasoning mixture by adding onion powder, garlic powder, black pepper, salt, brown sugar, cayenne pepper, smoked paprika, and ground mustard to a bowl. Mix it well and set the bowl aside.
  • Now cut the jalapenos in the middle, remove the seeds, and set them aside.
  • Take another bowl and add cream cheese, shredded cheese, and one tablespoon of the seasoning mixture to it. Mix them and add this mixture into the jalapeno.
  • After the jalapenos are stuffed with the cheese filling, wrap the jalapenos with pork sausage. Sprinkle some seasoning mixture on these eggs. Now, wrap bacon strips around them. Roll them to get an egg shape.
  • Place these armadillo eggs in a preheated (165 F) smoker and smoke for at least 2 hours. For tender bites, brush BBQ sauce on the eggs and serve. For crispy bites, you need to increase the temperature to 400 F.
