Ingredients:
1 cup basmati rice
1 cup grated cucumber
1/2 tsp mustard seeds
1/2 tsp cumin seeds
2 tsp chana dal
1 1/2 tsp urad dal
1/4 cup peanuts
10 cashew nuts
2 dry red chillies
1 tsp ginger, finely chopped
2 green chillies, chopped
1/4 tsp asafoetida
1 sprig curry leaves
1/4 tsp pepper powder
1 tbsp lemon juice
2 tbsp coriander leaves, chopped
salt to taste
2 tbsp ghee
Preparation:
- Wash the rice and cook in a deep pan adding enough water and salt till done. Drain the water and keep it aside to cool completely.
- Heat ghee in a thick bottomed pan and splutter mustard seeds and cumin seeds.
- Add urad dal, chana dal, peanuts and cashew nuts and saute till golden on medium flame.
- Add dry red chillies, curry leaves, asafoetida, chopped ginger, green chillies, grated cucumber, pepper powder and salt and saute for 2-3 minutes.
- Then add 2 cups cooked rice, lemon juice and chopped coriander leaves, mix well and cook for 3-4 minutes on low flame. Remove from the flame and serve hot…
