Ingredients:
1/2 kg chicken, cleaned
2 onions, finely chopped
1 tbsp ginger-garlic, crushed
2 green chillies, finely chopped or crushed
2 medium tomatoes, chopped
3 tbsp kashmiri chilli powder
1/4 tsp turmeric powder
1 tsp coriander powder
1/2 tsp pepper powder
1/2 tsp garam masala
1 tsp fennel powder
3 sprigs curry leaves
2 dry red chillies
salt to taste
3 tbsp + 1 tsp coconut oil
Preparation:
- Heat coconut oil in a claypot / manchatti and add red chillies and 1 sprig curry leaves.
- Add finely chopped onions, crushed ginger-garlic and green chillies and saute till onion turns light golden in colour.
- Add kashmiri chilli powder and saute for a minute.
- Add turmeric powder, coriander powder, pepper powder and garam masala and saute till raw smell goes.
- Add chopped tomatoes and salt and cook till tomatoes become soft and mushy.
- Add fennel powder and saute for a minute.
- Add cleaned chicken pieces, enough salt and curry leaves, mix well and cook covered on low-medium flame till chicken is cooked. (Do not add water while cooking chicken, stir in between).
- Now add required hot water and cook until the gravy thickens.
- Finally add 1 tsp of coconut oil and few curry leaves and switch off the flame.
- Serve with rice, pathiri, ghee rice, neer dosa etc…
