Tawa Mutton

Ingredients:

1/2 kg mutton, cut into pieces
1 medium onion, chopped
1 tbsp ginger-garlic paste
3 cardamoms
1 inch piece cinnamon
1 tbsp chopped ginger
1 tbsp chopped garlic
4 green chillies
3 medium tomatoes, chopped
1 tsp chilli powder
1 tsp coriander powder
1/4 tsp turmeric powder
1 tsp cumin powder
1/2 cup yogurt
1/2 tsp garam masala
2 tbsp lemon juice
chopped coriander leaves
1/4 cup fresh cream
salt to taste
3-4 tbsp ghee

Preparation:

  1. Heat 1 tbsp ghee in a pressure cooker and add cleaned mutton and fry for 2 minutes.
  2. Add cardamoms, cinnamon, chopped onion, ginger-garlic paste and salt and mix well. Add 1 cup of water to this and pressure cook till done.
  3. Heat 2-3 tbsp ghee / oil in a flat pan / tawa and add chopped ginger, garlic and green chillies and saute.
  4. Add chopped tomatoes and saute well till soft.
  5. Add chilli powder, coriander powder, turmeric powder and cumin powder and mix well.
  6. Add yogurt to this and mix well on low flame for 12-15 minutes.
  7. Add cooked mutton along with its stock as required and mix well.
  8. Adjust salt and add garam masala, lemon juice, chopped coriander leaves, fresh cream and cook for 5-7 minutes on low flame.
  9. Garnish with coriander leaves and serve….
